The art of espresso: how to achieve the perfect balance
Espresso is the base of many coffee drinks and achieving the perfect balance requires precision in several aspects.
Grinding and dosing
The grind should be fine and uniform, as it affects the extraction speed. The recommended dose is 18 to 20 grams for a double espresso.
Extraction time and temperature
The ideal extraction time is between 25 and 30 seconds with a water temperature of 90-96°C . A shorter time produces an acidic coffee, while a longer time generates bitter flavors.
Cream pressing and emulsion
The correct pressure is 9 bars , which allows the oils to be extracted and a consistent golden cream to be achieved on the surface of the espresso.
